Macaroni and Cheese Two Ways (both make a pretty big casserole dish full of Mac N Cheese)

My Granny’s Mac and Cheese:

1 medium bag of macaroni noodles

2 eggs

1 cup milk or cream

2 cups grated sharp cheddar

Salt and pepper to taste

Boil a large bag of Macaroni noodles until they are soft a little past al dente. Drain the noodles and  dump them into the large caserole dish. In a bowl beat together the eggs  and milk, salt and pepper.  Add 1 and 1/2 cups of the cheese to the egg mixture and add it into the casserole with the macaroni noodles- fold it into the  noodles so it the cheese is evenly distributed.  The milk and egg mixture should cover the noodles.  If it doesn’t add a bit more milk and another egg.  Honestly, my Granny doesn’t even use a recipe, she just adds stuff until it looks and tastes right, so don’t be scared to play around with this recipe.  If you want to make it really fatty and good add 4 tbsp of butter cut into small pieces throughout the noodle mixture.

Sprinkle the rest of the cheese on top- it doesn’t have to cover the top completely.  Put it into a 375 degree oven and bake for 45 minutes to an hour until the top starts to brown and the center doesn’t jiggle.  this is how my family eats mac n cheese at holidays.

My Macaroni and Cheese

1 medium bag of macaroni noodles cooked and drained

1 small onion, minced (about 1/2 a cup)

1 cup sharp cheddar grated

2 cups Velveeta grated

1/2 cup grated Parmesan (you know the kind in the can)

1 cup milk or heavy cream

Salt and pepper to taste

Cook the noodles and set aside in a large mixing bowl.  Saute the onions in a medium sauce pan just until they are soft.  Add the Velveeta and cream (or milk) and stir until nice and melted.  Add in the Parmesan cheese and stir until melted and combined.  Add salt and pepper to taste. Add the cheese sauce to the bowl of pasta and fold in until well mixed. Pour all of this into a large casserole and top with the grated cheddar.  Bake in a 350 degree oven until the cheese on top is melted and starting to brown.

This is a great recipe to add meet into: smoked sausage, chopped ham, crumbled bacon, even hot dog weenies, whatever you have in the fridge- if you want meat.

    hmm… my mac n cheese is so different than either of those… just layers of noodles, cheese (sharp cheddar and sometimes some gorgonzola), flour, salt and pepper (i like dill in mine too). when the dish is full to the top with these layers, pour in warmed milk until you can just barely see it below the top layer of noodles.

    bake until yummy!

    The wonderful thing about mac n cheese is there are so many ways to make it and all fo them are yummy.
    I’ll have to try out the gorgonzola sometime soon.
