Weekend Recipe

This one is from one of our favorite series of fiction: The Mitford Series by Jan Karon.

The books are wonderful and the food as described by the writer will make your mouth water.  There is actually a cookbook called the Mitford Kitchen Reader and here is one of the recipes from that book that I’ve tried and can attest to it’s tastiness:

Cynthia’s Heavenly Tea

3 Lipton family sized tea bags

2 sprigs of fresh mint (if you don’t have this on hand, skip it)

1 cup granulated sugar

1 6oz can of frozen lemonade

1 11 1/2oz cans of Apricot nectar (peach nectar works just as well)

2 teaspoons of almond extract

 

Steep the tea bags (with the mint leaves if you are using them) in 5 cups of boiling water for 4 minutes. Remove the tea bags and mint then add the sugar stirring until it is dissolved.  Stir in the remaining ingredients and add 3 more cups of cold water. Serve over ice.
